Far from being struck by gloom, our Nation Magazine group members were in an excellent frame of mind.We seem to be adapting very fast to the new reality. The threat from outside creates cohesiveness on the inside. Everyone was up to date on the situation.
Dale, our host, made a chilies rellenos casserole, which was a yuge hit. He generously shared his recipe:
Traditional Chilies Rellenos calls for stuffed peppers that are battered and then fried. One of the usual stuffings is cheese though there are other stuffings, different types of batter as well as various toppings. Way too much work if you ask me! So this one casserole style, is SO easy:
1 lb jack cheese shredded
1 lb medium cheddar cheese shredded
1 7 oz can of diced green chilies.
1 12 oz can of evaporated milk
4 eggs
1/2 cup of flour
1 8 oz can of tomato sauce
Mix together cheeses and green chilies and put in an 8" x 8" casserole dish. Beat milk, eggs and flour together and pour over casserole dish. Bake 350 degrees for 1 hour. For the last 10 minutes, top with tomato sauce.
This was good! Everyone had seconds.
Tomorrow is our kids' day at Lincoln Park. Should be fun.

That photo is a gem! Glad people understand cohesiveness. The San Francisco bubble is a little too protective for older folks yet to take in that necessity, but the young seem to be doing alright.

Jan: Most of the group members have been involved in liberal causes for years. Hawaii is a bubble, too.
What my eyes are wide open to now is the chronic poverty of certain groups, which they accept with such good grace. It's heartbreaking, especially for the little kids and their loving and mostly helpless moms.

Can you share your recipe for the cabbage-carrot salad? I know the main ingredients, plus lime, garlic, cumin/caraway seeds, but not the measurements.

Brandon: I'm not very good at measuring things, so you'll have to go somewhat by taste. These are approximations.
Ingredients:
1/2 medium head of cabbage
2 medium carrots
2 cloves of garlic
1/4 cup neutral oil, like safflower, etc.
juice of one lime or lemon
tsp of caraway seed
or tsp of ground cumin
Salt and pepper to taste
(A small amount of agave syrup or tsp of sugar, to round out the flavor if you want, but be careful! It's not supposed to be sweet.)
I use a food processor, but this can be done by hand, just takes longer.
Put the oil, lemon juice, garlic and seasoning into the processor and blend. Do not remove. Change blade to grating tool and process the cabbage and carrots.
Put into bowl and mix well.
